Green monster time! This is the next dessert counterpart to the carrot cake green monster, one of my favorites when I want a sweeter and more exciting green monster.
Antioxidants. Walnuts. Yum.
Blueberry Pie Green Monster
- 2 C spinach
- 1 C milk
- 1 t vanilla (or a combination with vanilla soy milk)
- 1 ripe banana
- 1/2 C frozen blueberries
- 1 T ground flaxseed (optional)
- 1/4 C plain Greek yogurt
- 1/4 C walnuts (you could substitute nut-free granola or oats if you can’t have nuts)
- dash of cinnamon (optional)
Combine all the ingredients and blend until smooth.
This “green” monster is actually a pretty dark purple color, which was a pleasant surprise ’cause I was dreading taking pictures of a murky swamp smoothie.
Isn’t that an appetizing mental picture?
But seriously, this is good.
Plus, there’s antioxidants and healthy fats and protein. Can’t go wrong with that!
I think I should publish a coffee table book entitled “Cats in Things” because every where I turn, Henry or Emerson is on top of or inside something new.
It’s adorable. And funny! I love having double the cat.
Although the cats are getting along fine these days, I think we’ve seen the advent of the green-eyed monster (literally) (litterally…). Henry has started bullying Emerson a little bit–nothing serious, but I’m fairly sure that it’s because he hasn’t been getting the attention he is used to. Emerson is so much snugglier than Henry, so it’s hard to not pay him all the attention as the new cat.
Gosh, I over think this. I’m definitely not ready to be a parent!
