I’ve been on a chorizo kick lately. It’s just so garlicky and spicy and salty. It’s also flavorful enough for even a little to make just about everything taste amazing, and it cooks super fast over a hot stove.
Not really much else you could ask for from a ground meat stuffed in a casing.
Oh-and it tastes just lovely with a glass of red wine.
Now there’s nothing more you could want.
Chard and Chorizo Bowl (serves two)
- 1 C cooked bulgur wheat (see below for a quick and easy recipe)
- 1 gigantic (seriously) bunch Swiss chard
- 2-3 chorizo sausages (about 1/4 lb)
- 1-2 ounces grated Parmesan cheese
- salt and pepper to taste
This is eerily similar to my recent chorizo and kale pasta bowl, just a few different ingredients to switch it up.
So for the bulgur wheat–to cook, I combine 1 C water and 1 C chicken broth and bring to a boil.
Okay, to be honest, I combine 2 C water with a bouillon cube. Same difference, okay? We’re talking easy and convenient here. I add the bulgur wheat and cook until the water is absorbed. Stir in a 1 T dried parsley, and it’s the perfect base for any dish. Season with salt to taste.
Back to the chorizo.
I removed the sausage from the casing and cooked it over medium heat in big ol’ pot.
Meanwhile, remove the stems from the chard and slice the leaves into thin ribbons. Don’t be scared about how much chard you have–it’ll cook down by a ridiculous amount.
Add the bulgur wheat (already cooked), and stir until the chard wilts. Top with the grated parmesan cheese and let it melt right in.
To add a fancy touch, serve with said glass of wine and a few big flakes of Parmesan on top.

I ran five miles today to and from an amazing free park I recently discovered is near our new apartment–it has a 1/2 mile track, nice places to sit and enjoy a picnic, and an…animal sanctuary? including a bear and a buffalo and all kinds of other animals I had no idea lived so close by.

Sorry you are alone with prickly Henry – great study opportunity, I guess. Please go back to the park and take awesome animal pictures. Maybe a picture of the bear will be an inspiration to Henry.

I just started reading your blog and I am curious about your presentation on yoga and low back pain. I suffer from low back pain and it often time keeps me from practicing yoga. I am a certified yoga teacher and I love yoga, but I am not convinced that yoga is good for my body. Do you teach yoga? Do you have any insight or information on practicing yoga with low back pain?

I don’t teach yoga–I’m a soon to be physical therapist (graduate in three weeks!) and this is my final project. Yoga can be great for back pain but it depends on the cause of your back pain how you practice (flexion vs. extension poses, etc). Studies have shown that yoga is very effective in treating chronic low back pain! I’d suggest that you find out the cause of your back pain and find a physical therapist who can help plan a yoga program that targets your problem.
