I’m back from my trip to Syracuse for the weekend…and it was hard to leave. Would you want to leave this behind?
I didn’t think so.
And it was a long day back at work/school.
A green monster was needed pronto to fortify strength and raise spirits.
Mango Green Monster
- 1/2 mango (I used one small champagne mango–YUM!)
- 1 ripe banana, frozen (I peel them beforehand and freeze ‘em for easy green monster making)
- 1 C milk
- 2 handfuls raw spinach
- 1/4-1/2 C Greek yogurt (I used strawberry flavored, but plain or other flavors would work fine!)
- 2-3 ice cubes (optional)
Combine all the ingredients in the blender and mix until smooth. I put the light stuff down first (spinach) top it with heavy stuff (banana, ice if you want it) and pour liquids over the top for best mixing.
The best part about this smoothie is the tang from the yogurt. And the sweet, sweet mango.
This makes enough to serve two people–or one very hungry person.
If you have a husband longing to be like Michael Jordan, it will satisfy his need for protein and sugar quite nicely.
He missed that basket, by the way.

Lastly–I have a head of cauliflower that needs using up ASAP…but I just can’t seem to get inspired. Ideas, please?

Curried roasted cauliflower! I roasted a head of broccoli the other day in the oven with a bunch of chopped-up garlic and chilli pepper flakes, it was delicious, but I’d still love to try curried roasted cauliflower, I’ve seen recipes for it pop up all over so it must be good, right? (also, it’s perfect for 2 when you have a whole head because the broccoli at least shrunk quite a bit in the oven. We barely had enough for the 2 of us with a whole head.)

I cook up cauliflower in a large pot until tender. While that is cooking I saute onions until wilted and brown.
Once the cauliflower is done, I combine it with the onions in a food processor. I add a couple of tablespoons of buttermilk and puree.
Add salt and pepper to taste. It looks like mashed potatoes and tastes great.

I saw a recipe on a magazine that used roasted cauliflower as the “turf” with scallops as the “surf”. It looked delicious!
