Avocado Mashed Potatoes

Hello, my friends.

It’s been quite busy around these parts lately–and this weekend looks to get even busier.  The sad part is, it’s not really the “fun” kind of busy (except seeing my amazing sister and father in the great NYC tomorrow for breakfast!), but that mundane, school work and studying, trying to get to the gym more than once, boring kind of busy.

However, I have been kind of looking around at apartments in the area for something new (I’ve been on and off obsessed with the idea of moving for the last few months, and I’m currently on the “on” part of the cycle), and we have a few places to go look at…one of which I’m really super excited about.  I’m just ready for a change.

So either it goes really amazingly well and I get super excited to move OR the apartment totally sucks and I enter the “down” half of the cycle during which I learn to re-appreciate our current apartment.  Either way, I’m ready to move on.

I’ve actually been cooking a ton this week, and it has been a little freeing and more than slightly enjoyable to be able to cook without having to take photos or worry about daylight.  As usual, though, a few days went by and I started to miss blogging. So–I’m back!

Here’s a quick recipe for a healthy side dish that grew out of my necessity to use up some ingredients in the house.  It’s also green–perfect for St. Patty’s day!

Avocado Mashed Potatoes

  • 5 medium potatoes
  • 1/2 ripe avocado
  • 1/4-1/2 C milk
  • salt and pepper to taste

Make these as you would normal mashed potatoes–peel and cube the potatoes, and boil them until fork tender.  Add the avocado and milk.

Mash it up!

Season with salt and pepper, and enjoy.

I loved the creaminess from the avocado, which went perfectly with the potatoes.

Keep in mind that this dish does not reheat well (I wouldn’t even try) so be prepared to eat it all in one sitting, and mix in the avocado right before serving.

I read somewhere that avocado is called “butter fruit” in some countries because of its creamy, buttery taste.

So true–it’s the perfect substitution for certain occasions.

And just to start off your weekend the right way, here’s a glimpse of a naughty cat trying to sneak out with the recycling.

He needs some better camouflage, I think.

    Have a great time with Dad and Kristen…and remember daylight saving time mean more light in the evening to take some of the pressure off those dinner time photo shoots!

    I love your naughty cat ;-) I have not tried Avocado in mashed potatoes but I am not suprised it works. I recently baked cookies with them and I was suprised how well they work in cookies. It is a strange world. Have a nice weekend,
