So…I ran three miles yesterday. Wooo! Considering it was just the end of July/beginning of August that I decided to start at half a mile and work my way up, I’m pretty happy to have accomplished my goal. Anyway, by the time Fritz and I ran a few errands and made it home from the gym, we were starving. Immediate intervention was necessary.
I’ve posted this recipe before–you can see it here. While perusing that page, which was written over a year ago, I suggest you also admire how much my photography has improved over the last year. Whew!
The reason I’m repeating this post is because so many of you didn’t know me then, and these foil packets are such a seriously good way to have a quick and healthy dinner–with minimal clean up. I know–the trifecta! Not to mention it tastes pretty darn good, too.
Grilled Foil Packets (makes two large meals)
- Veggies of choice–I used potatoes (4 small ones), tomatoes (2 roma), green beens (a hearty handful), and a red onion
- Sausage–we used sweet Italian, but kielbasa or chorizo would be great, too
- Salt and pepper to taste
This really couldn’t get much easier. Preheat the grill and chop the veggies. Lay them on a large square of foil, and top with the sausage, salt, and pepper. Place another piece of foil on top, rolling the edges up together. Leave a small hole to pour a small amount of water (a few tablespoons) into the packet, then close.
Grill over medium heat for about 20-25 minutes, until the sausage is cooked through. All finished!
This is probably Fritz’s dream lunch. Big and hearty, but it makes me happy too, since we can use all of the produce that needs to be used up soon.
Plus, check out those gorgeous tomatoes from the garden! I’m a proud mama.
I cleaned the house top to bottom yesterday, but was feeling today like I might be catching a cold. I think I’ve managed to fight it off with green monsters and will power, but I’ll let you know tomorrow how it goes.

Definitely! I’d try it at 350 for 20-25 minutes and it should work perfectly

Congrats on running 3 miles! I remember when I started running it took me 6 months to build up to that. You did great!
Also, these foil packet meals look delicious! It can’t get any simpler than this!

What a great cooking method! I have tried something similar in the oven – a dish of baked goats cheese. you’ve inspired me to expand the repertoire!

Dinner tonight!
I have some parmesan and sundried tomato chicken sausage from a local farm! I think I might add some apple, onion, sweet potato, and tomato.. everything that’s lying around!

WHOA! I have got to try this and hopefully it tastes as good as your photos look!! I have to do my grocery shopping tomorrow so I plan to pick up the ingredients I need and make it over the weekend. I’m sure my family will go nuts over this!!
